A healthier alternative to traditional chicken parmesan, this dish combines crunchy textures with gooey cheese and savory marinara sauce for a comforting meal.

  • 2 tablespoons olive oil
  • 2 chicken breasts (about 1 pound total)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup parmesan cheese (fresh grated)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella
  • 2 tablespoons minced parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with foil and brush it lightly with olive oil.
  2. Slice the chicken in half horizontally to create thinner pieces, then pound them to an even thickness. Pat them dry and season with salt and pepper.
  3. Combine the panko, parmesan, garlic powder, oregano, and black pepper in a shallow dish. In another bowl, beat the egg.
  4. Dip each piece of chicken into the egg, then dredge it in the breadcrumb mixture, pressing down to ensure it sticks well.
  5. Place the coated chicken on the baking sheet and bake for 15 minutes, or until cooked through.
  6. Flip the chicken, drizzle marinara sauce over the top, and sprinkle with mozzarella.
  7. Broil for 2-4 minutes, or until the cheese is melted and bubbly.
  8. Serve over spaghetti or alongside a fresh salad, garnished with parsley if desired.
