  • 1 to 1.5 pounds boneless (skinless chicken breasts)
  • 4 cups lukewarm water
  • ¼ cup salt
  • 1 tablespoon olive oil
  • ¼ teaspoon salt (optional)
  • ¼ teaspoon fresh ground black pepper
  • ½ teaspoon smoked or sweet paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon dried rosemary
  • ¼ teaspoon dried parsley
  • ⅙ teaspoon cayenne pepper
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 425˚F.
  2. Mix the lukewarm water with the salt until dissolved. Immerse the chicken in this brine for 20-30 minutes.
  3. Whisk together all your seasoning ingredients in a bowl.
  4. Drain and rinse the chicken to remove excess salt. Pat it dry with paper towels, drizzle with olive oil, and coat evenly with your seasoning mix.
  5. Place the chicken in a baking dish and roast for 22-25 minutes or until the internal temperature reaches 165˚F.
  6. Broil on HIGH for the last 3-4 minutes to achieve a golden-brown finish.
  7. Allow the chicken to rest for about 10 minutes before serving. Garnish with fresh chopped parsley.

Brining is key to keep the chicken moist and flavorful. Allowing the chicken to rest redistributes the juices for a succulent bite.
