A delightful casserole combining the comfort of French toast with the ease of overnight preparation, featuring warm aromas of cinnamon and fresh bananas.

  • 1 lb loaf Sourdough or French Bread, cut into chunks
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup sugar
  • 1/4 cup light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 67 medium-sized bananas, chopped
  • 3/4 cup all-purpose flour
  • 3/4 cup firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup salted butter, cut into pieces

Instructions

  1. Preheat your oven to 350°F (176°C) and grease a 9×13 inch casserole dish.
  2. Combine the bread chunks in a large bowl and set them aside.
  3. Whisk together the eggs, milk, cream, both sugars, vanilla extract, and cinnamon in a separate bowl until thoroughly blended.
  4. Pour the egg mixture over the bread chunks, then add the chopped bananas and carefully stir to combine.
  5. Transfer the mixture into your prepared casserole dish, spreading it out evenly. Cover with plastic wrap and refrigerate overnight.
  6. Bake the casserole for about 35-40 minutes, or until it reaches your preferred level of doneness.
  7. Mix together the dry ingredients for the streusel (flour, brown sugar, and cinnamon), and then add in the butter, mashing it until crumbly.
  8. Sprinkle the streusel topping over the casserole when it is nearly done.
  9. Return it to the oven and bake for another 5 minutes, until the streusel is melted and golden brown.
  10. Serve warm, drizzled with syrup.

Notes

Use stale bread for better absorption of the custard mixture. The sweeter the bananas, the better the flavor. Allow the mixture to sit overnight for best results.
