A delightful overnight casserole combining buttery croissants, creamy eggs, and crispy bacon or sausage, perfect for lazy brunches.

  • 6 large croissants, torn into pieces
  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked and crumbled bacon or sausage
  • 1/4 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and Dijon mustard until well-combined.
  2. Grease a baking dish and layer the torn croissant pieces evenly on the bottom.
  3. Sprinkle the crumbled bacon or sausage, cheese, and green onions over the croissant layer.
  4. Gently pour the egg mixture over the top, ensuring that all croissant pieces are well-coated.
  5. Cover the dish tightly with plastic wrap or foil and refrigerate it overnight, or allow it to rest for at least 2 hours if short on time.
  6. When ready to bake, preheat your oven to 350°F (175°C).
  7. Remove the casserole from the fridge, uncover it, and bake for 30-40 minutes, or until the top is golden brown and firm.
  8. Let it cool for a few minutes before slicing and serving.

Notes

For an extra crunchy topping, add breadcrumbs or crushed crackers. You can make this casserole vegetarian by omitting the meat and adding more veggies.
