A delightful pancake casserole featuring mixed berries and yogurt, perfect for family gatherings or leisurely brunches.

  • 1 1/2 cups milk
  • 2 eggs
  • 1 cup mixed berries (blueberries, strawberries, raspberries)
  • 1 cup yogurt (plain or flavored)
  • Maple syrup for serving
  • Butter for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Generously grease a baking dish with butter.
  2. Combine pancake mix, milk, and eggs in a large bowl and mix well until smooth.
  3. Pour half of the batter into the greased baking dish, spreading it evenly.
  4. Layer the mixed berries over the batter, ensuring they’re well distributed.
  5. Spoon dollops of yogurt over the berries, creating creamy pockets as you go.
  6. Pour the remaining batter over the top, ensuring the berries and yogurt are fully covered.
  7. Bake for 25-30 minutes, or until the top is golden and a toothpick inserted comes out clean.
  8. Allow it to cool slightly before serving warm, drizzled with maple syrup.
