An easy, oven-baked casserole combining fluffy pancake elements, perfect for family breakfasts or brunch gatherings.

Ingredients

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 eggs
  • 1 cup mixed berries (blueberries, strawberries, or raspberries)
  • 1 cup yogurt (plain or flavored)
  • 1/4 cup maple syrup
  • Butter or oil for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or oil.
  2. Combine the pancake mix, milk, and eggs in a mixing bowl. Stir gently until just blended—be careful not to overmix.
  3. Pour half of the pancake batter into the prepared baking dish.
  4. Layer half of the mixed berries on top of the batter.
  5. Add dollops of yogurt across the berries and drizzle with maple syrup for a touch of sweetness.
  6. Pour the remaining pancake batter over the yogurt and berries until they are well-covered.
  7. Top with the remaining berries, completing your beautiful casserole.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  9. Let the casserole cool slightly before serving. Enjoy warm!

Notes

Drizzle additional maple syrup or sprinkle powdered sugar on top before serving. Pairs well with crispy bacon or sausage.
