Pancake Poppers are delightful mini muffins that combine the classic flavors of pancakes into little bites of joy, perfect for breakfast or a sweet snack.

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Optional toppings: maple syrup, berries, whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix the buttermilk, egg, and melted butter until thoroughly blended.
  4. Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined.
  5. Spoon the batter into each muffin cup, filling them about three-quarters full.
  6. Bake in the preheated oven for 12 to 15 minutes, or until the tops are golden and a toothpick comes out clean.
  7. Allow to cool slightly before removing from the tin.
  8. Serve warm with toppings like maple syrup, berries, or whipped cream.
