A delightful blend of pancakes and breakfast sausage, this casserole is perfect for brunch and gatherings.

Ingredients

  • 2 cups Pancake Mix
  • 3 large Eggs
  • 1 cup Milk
  • 1 pound Breakfast Sausage
  • 2 tablespoons Butter
  • 1/2 cup Maple Syrup
  • 2 cups Fresh Fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and crumbly; drain any excess grease and set aside.
  3. In a large bowl, whisk together the pancake mix, eggs, and milk until smooth and lump-free.
  4. Spread the cooked sausage evenly across the bottom of your greased baking dish.
  5. Pour the pancake batter over the sausage, then drizzle with maple syrup.
  6. Bake for 25 to 30 minutes, or until it’s golden brown and a toothpick comes out clean when inserted.
  7. Allow to cool for a few minutes before slicing and serving.

Notes

Serve warm with powdered sugar or fresh fruit. Can be made ahead and stored in the refrigerator.
