Indulgent chicken bombs filled with creamy cheese and served over fluffy mashed potatoes, perfect for weeknight dinners.

Ingredients

  • 2 chicken breasts
  • 1 cup Parmesan cheese, grated
  • 8 oz cream cheese, softened
  • 4 cups mashed potatoes
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Salt, to taste
  • Pepper, to taste
  • Roasted vegetables (optional)
  • Garlic bread (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a baking dish and spread the mashed potatoes in an even layer at the bottom.
  2. In a mixing bowl, combine the cooked, shredded chicken, softened cream cheese, and grated Parmesan. Season with salt and pepper, and stir until smooth.
  3. Form the chicken mixture into compact round ‘bombs.’ Alternatively, you can stuff and roll whole chicken breasts.
  4. Place each chicken bomb on top of the mashed potatoes in the baking dish, spacing them slightly apart.
  5. Bake for 25–30 minutes until golden and bubbly. Optionally, broil for 1–2 minutes for extra color.
  6. Serve warm, with garlic bread or roasted vegetables on the side.

Notes

For quicker prep, use rotisserie chicken or store-bought mashed potatoes. Adjust salt as Parmesan can be salty.
