A quick and easy weeknight dinner, Parmesan Crusted Chicken features a crispy, golden coating paired with tender chicken, guaranteed to please the family.

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper in a shallow bowl until well combined.
  3. Beat the eggs in a separate bowl until fully blended.
  4. Dip each chicken breast into the beaten eggs, allowing any excess to drip off.
  5. Coat the chicken in the Parmesan-breadcrumb mixture, pressing firmly to make sure it sticks.
  6. Heat the olive oil in a skillet over medium heat.
  7. Sear each chicken breast for about 2-3 minutes on each side, until they turn golden brown.
  8. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes until cooked through and the coating is crispy.
