A quick and delicious dish featuring tender chicken coated in a crispy Parmesan breadcrumb crust.

  • 4 boneless, skinless chicken breasts (approximately 1 to 1.25 lb total)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Olive oil for frying (about 2–3 tablespoons)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly oil a baking dish or line it with foil for easy cleanup.
  2. Combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper in a medium bowl.
  3. Beat the eggs in another bowl until smooth.
  4. Pat the chicken breasts dry with a paper towel. Dip each breast into the egg mixture, allowing the excess to drip off.
  5. Press each chicken breast into the breadcrumb mixture, ensuring an even coating.
  6. Heat olive oil in a large skillet over medium heat until it shimmers.
  7. Add the chicken to the skillet and brown for 3–4 minutes on each side until golden.
  8. Transfer the chicken to the prepared baking dish and bake for 20–25 minutes, or until an instant-read thermometer reads 165°F (74°C).
  9. Allow the chicken to rest for 3–5 minutes before serving.

Notes

For extra crunch, consider broiling the chicken for a few minutes at the end of baking.
