  • 1 cup rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium. Season the chicken breasts with salt, pepper, and Italian seasoning, then cook for 6–7 minutes on each side until browned. Remove the chicken and set aside.
  2. Sauté the minced garlic in the same skillet for about one minute until fragrant—don’t let it burn!
  3. Pour in the chicken broth, bringing it to a gentle simmer. Stir in the rice and heavy cream, then add in the grated parmesan cheese, mixing until melted and creamy.
  4. Add the chicken back into the skillet, ensuring it sits nicely in the rice mixture. Reduce the heat and let everything simmer for an extra 5–10 minutes until the rice is fully cooked and has soaked up the incredible flavors.
  5. Garnish with fresh parsley before serving.

Notes

For a sharper flavor, swap out parmesan for pecorino, or use vegetable broth for a lighter, vegetarian-friendly option. Try adding sun-dried tomatoes or spinach for a twist.
