A cozy, nutritious breakfast that combines the sweet creaminess of ripe bananas with the rich flavor of peanut butter, creating a wholesome baked dish.

  • 1 large spotty banana (mashed)
  • ½ cup creamy all-natural peanut butter
  • 3 tbsp real maple syrup (or honey)
  • 1 ¾ cups unsweetened almond milk or oat milk
  • 1 large egg (or 1 tbsp ground flaxseed with 3 tbsp warm water for vegan option)
  • 2 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch square dish.
  2. In a large bowl, mash the banana until smooth.
  3. Add the creamy peanut butter, maple syrup, almond milk, egg (or flaxseed mixture), and vanilla extract. Whisk together until you have a uniform mixture.
  4. Stir in the rolled oats, ground cinnamon, baking powder, and salt. If the batter feels too thick, add a splash more milk to reach your desired consistency.
  5. Pour the mixture into your greased baking dish, spreading it evenly.
  6. Bake in the preheated oven for 35 to 45 minutes, or until the top is golden brown and the center is set.
  7. Allow it to cool for about 5 minutes before serving. For an extra treat, drizzle some peanut butter on top and garnish with banana slices.

Notes

Best enjoyed warm. Can be paired with fresh fruit, yogurt, or a scoop of ice cream.
