  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked white rice
  • Mixed vegetables (e.g., bell peppers, broccoli, carrots)

Instructions

  1. In a bowl, mix together peanut butter, soy sauce, honey, garlic, ginger, sesame oil, salt, and pepper to create the sauce. Whisk until smooth; add a tablespoon of warm water if it’s too thick to stir easily.
  2. In a skillet over medium heat, add chicken pieces and cook until browned and cooked through. Don’t overcrowd the pan — cook in batches if needed so the chicken gets color.
  3. Pour the sauce over the chicken and stir to coat evenly. Reduce heat slightly so the sauce doesn’t scorch.
  4. Let it simmer for a few minutes until heated through and slightly thickened, stirring occasionally. If the sauce thickens too much, loosen with a splash of water or chicken stock.
  5. Serve the Peanut Butter Chicken over cooked white rice and alongside a mix of your favorite vegetables.

Notes

Use creamy peanut butter for the smoothest sauce; swap soy sauce for tamari for gluten-free. For a spicy kick, add Sriracha to the sauce.
