A delightful dish that combines tender chicken with a creamy peanut sauce, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1 tablespoon grated ginger
  • 2 cloves minced garlic
  • 2 tablespoons honey
  • 1 cup coconut milk
  • 1 cup white rice
  • 2 cups mixed vegetables

Instructions

  1. Whisk together the peanut butter, soy sauce, grated ginger, minced garlic, honey, and coconut milk in a bowl until smooth. Thin with water if necessary.
  2. Heat 1–2 tablespoons of oil in a heavy skillet over medium-high heat. Pat the chicken breasts dry, season with salt and pepper, and cook for 5–7 minutes per side until golden and cooked through.
  3. Reduce the heat to medium-low and pour the peanut sauce over the chicken. Simmer uncovered for 5–10 minutes, spooning sauce over the chicken occasionally.
  4. Cook the white rice according to package instructions and fluff with a fork once done.
  5. Steam or sauté mixed vegetables until tender-crisp, about 4–6 minutes.
  6. Slice the chicken, drizzle extra sauce on top, and serve on a bed of rice with vegetables on the side.

Notes

Optionally garnish with sesame seeds or fresh cilantro before serving.
