Ingredients
Scale
8 oz noodles (spaghetti or rice noodles)
1/2 cup peanut butter
1/4 cup soy sauce
2 tbsp honey or maple syrup
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp ginger, grated
1/4 cup water (or as needed for consistency)
Vegetables (like bell peppers, carrots, or snap peas)
Optional protein (chicken, shrimp, or beef)
Instructions
Cook the noodles according to the package instructions. Drain well and set aside.
In a medium bowl, whisk the peanut butter, soy sauce, honey (or maple syrup), sesame oil, minced garlic, grated ginger, and 1/4 cup water together until the sauce is silky.
Heat a large pan over medium heat. Add the cooked noodles and pour the peanut sauce over them. Toss gently to coat each strand.
Stir in your chosen vegetables and any optional protein. Cook just until vegetables are tender-crisp and protein is heated through — about 2–4 minutes.
Serve the noodles warm and garnish as desired.
Notes
Store leftover noodles in an airtight container for up to 3–4 days.
