A quick and delicious breakfast option featuring creamy avocado, aromatic pesto, and perfectly cooked eggs on toasted bread.

  • 2 slices of bread
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil (optional)
  • Chili flakes (optional)

Instructions

  1. Toast your bread slices until they’re golden brown and crispy.
  2. In a small pan over medium heat, cook the eggs to your preference: fry, poach, or scramble.
  3. While the eggs are cooking, mash the ripe avocado in a bowl and season it with salt and pepper to taste.
  4. Spread a generous layer of pesto on one side of each toasted slice of bread.
