A delicious and quick dish combining creamy goat cheese and vibrant pesto with perfectly cooked eggs, ideal for breakfast or brunch.

Ingredients

  • 4 Eggs
  • 1/2 cup Pesto sauce
  • 1/4 cup Goat cheese
  • 2 slices Crusty bread
  • 1 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat up a skillet over medium heat and add a splash of olive oil.
  2. Pour in the pesto sauce, letting it warm for about one minute.
  3. Gently crack the eggs directly into the skillet, resting them on the warm pesto.
  4. Cook the eggs for approximately 3-4 minutes until the whites are set and yolks are runny.
  5. Toast the crusty bread to your desired crispiness.
  6. Spread a generous layer of goat cheese on top of the toasted bread.
  7. Plate the pesto eggs carefully on top of the goat cheese and sprinkle with salt and pepper to taste.

Notes

For variations, you can substitute goat cheese with feta, and feel free to add additional toppings like sautéed spinach or hot sauce.
