Pesto Grilled Cheese

A delightful twist on the classic grilled cheese sandwich featuring mozzarella, vibrant pesto, and fresh tomatoes on crispy sourdough.

Ingredients

  • 4 slices of sourdough bread
  • 4 tablespoons of pesto sauce
  • 4 slices of mozzarella cheese
  • 4 slices of tomato
  • 2 tablespoons of butter, softened
  • 1 tablespoon of olive oil

Instructions

  1. Spread 1 tablespoon of pesto sauce evenly on one side of each slice of sourdough bread.
  2. On the pesto-covered side of two slices, place one slice of mozzarella cheese.
  3. Layer two slices of tomato on top of the mozzarella cheese on each slice.
  4. Add another slice of mozzarella cheese atop the tomatoes for a delightful layered effect.
  5. Complete each sandwich by placing the remaining slices of sourdough on top, pesto side down.
  6. Spread 1 tablespoon of softened butter on the exterior of each sandwich, making sure to cover both top and bottom slices.
  7. Heat the olive oil in a skillet over medium heat.
  8. Carefully place the sandwiches in the skillet and cook for about 3–4 minutes on each side, or until the bread turns golden brown and the cheese has melted.
  9. Once cooked, remove the sandwiches from the skillet and let them cool for a minute or two.
  10. Cut the sandwiches diagonally for easy handling and serve while warm.

Notes

Try serving with a side of arugula salad or tomato soup. For a touch of gourmet, drizzle with balsamic reduction.
