Ingredients

  • 4 large eggs
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your preference)
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 4 large whole wheat tortillas
  • Salt and pepper to taste
  • Optional: salsa, avocado, or hot sauce for serving

Instructions

  1. Heat a large skillet over medium heat and sauté the diced onions and bell peppers for about 5 minutes until softened.
  2. Stir in the cooked sausage (or bacon) and black beans. Cook for another 2-3 minutes until heated through.
  3. In a separate bowl, whisk together the eggs and season with salt and pepper.
  4. Pour the egg mixture into the skillet, stirring gently. Cook until the eggs are fully scrambled, approximately 3-4 minutes.
  5. Remove the skillet from heat and stir in the shredded cheese until melted.
  6. Lay out the tortillas flat and divide the egg mixture evenly among them.
  7. Roll each tortilla tightly, folding in the sides to prevent spillage.
  8. If preparing for later, wrap each burrito in foil or plastic wrap and freeze. Reheat in the microwave for about 2-3 minutes when ready to eat.

Notes

For a fluffier egg texture, add a splash of milk to the eggs before whisking. These burritos can be stored in the freezer for up to three months.
