Fluffy protein-packed pancakes made with oats, Greek yogurt, and banana, perfect for a nutritious breakfast.

Ingredients

  • 50g protein powder
  • 2 eggs
  • 1 cup oats
  • 1 banana
  • 1 cup Greek yogurt
  • Milk or almond milk (as needed)
  • Optional toppings (berries, nuts, etc.)

Instructions

  1. In a bowl, mix together the protein powder, oats, and eggs until well combined.
  2. Mash the banana and carefully fold it into your mixture until fully incorporated.
  3. Heat a non-stick skillet over medium heat. Pour in the batter to form pancakes, aiming for about 4 inches in diameter for even cooking.
  4. Cook each pancake for approximately 2-3 minutes on each side, or until they’re golden brown and fluffy.
  5. Serve hot with a generous dollop of Greek yogurt and a selection of optional toppings, such as fresh berries or chopped nuts.

Notes

For a lighter pancake, feel free to omit the protein powder or substitute with plant-based options.
