A warm and wholesome pumpkin baked oatmeal that’s perfect for breakfast or a comforting snack.

Ingredients

  • Avocado oil or neutral oil (for greasing)
  • 2 cups rolled oats
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ⅓ cup maple syrup or honey
  • Chocolate chips, nuts, raisins, or topping of choice (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and generously grease an 8×8 baking dish with oil.
  2. Combine the rolled oats, pumpkin spice, baking powder, and salt in a medium bowl. Mix well.
  3. Add the canned pumpkin puree, milk, eggs, vanilla extract, and maple syrup or honey to the dry ingredients. Stir until fully combined.
  4. Spread the oatmeal mixture evenly in the prepared baking dish.
  5. Bake for 30–35 minutes, or until the edges puff up, the center is firm, and the top is golden brown.
  6. Allow the oatmeal to cool for about 10 minutes before slicing.
  7. Serve warm, either with a dollop of yogurt, a splash of milk, or simply on its own.

Notes

For added texture, let the baked oatmeal sit before slicing. Feel free to customize with different toppings such as nuts or cranberries.
