  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 375℉ and generously grease a 9×9-inch baking dish with butter or cooking spray.
  2. In a large bowl, combine the old-fashioned rolled oats, pumpkin pie spice, baking powder, and fine salt.
  3. In another bowl, whisk together the pumpkin puree, milk, eggs, maple syrup, melted butter (or coconut oil), and vanilla extract until fully blended.
  4. Gently pour the wet mixture into the dry ingredients, stirring until just combined.
  5. Transfer the oatmeal batter into your prepared baking dish. For an extra crunch, consider sprinkling some additional toasted pecans on top.
  6. Bake for 30-34 minutes, until the center is set and a toothpick inserted comes out clean.
  7. Allow it to cool for about 5 minutes before cutting into squares. Serve warm with a dollop of yogurt or whipped topping, a drizzle of maple syrup, and a sprinkle of pumpkin pie spice.

Notes
