A delightful casserole combining soft bread and vibrant blueberries, perfect for brunch or breakfast-for-dinner.

Ingredients

  • 6 slices of bread, cubed
  • 2 cups of fresh blueberries
  • 4 eggs
  • 2 cups of milk
  • 1/4 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • Powdered sugar for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt in a large bowl until well combined.
  3. Arrange the cubed bread in a greased 9×13 inch baking dish, then sprinkle the blueberries evenly over the bread.
  4. Pour the egg mixture over the bread and blueberries, pressing down slightly to help the bread absorb the liquid.
  5. Cover the dish with foil and refrigerate for at least 30 minutes, or ideally overnight for the best results.
  6. Bake uncovered for 45-50 minutes, until the top is golden and the casserole is set.
  7. Serve warm, dusted with powdered sugar if desired.

Notes

For a delightful twist, add a drizzle of extra maple syrup or a dollop of whipped cream. This dish can also be paired with crispy bacon or turkey sausage for a complete meal.
