  • 8 large eggs
  • 2 cups milk
  • 4 cups bread cubes
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried mustard (optional)
  • Chopped vegetables (like bell peppers, onions, or spinach, optional)

Instructions

  1. In a skillet, heat the breakfast sausage over medium heat. Cook until browned and crumbly. Drain any excess fat.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and optional mustard.
  3. Grease a baking dish with cooking spray or butter.
  4. Layer the bread cubes in the dish, followed by the cooked sausage, cheese, and any additional vegetables if desired.
  5. Pour the egg mixture evenly over the layered ingredients.
  6. Cover with plastic wrap and refrigerate overnight.
  7. The next morning, preheat your oven to 350°F (175°C).
  8. Bake the casserole for 45-50 minutes until it is set and a golden color forms on top.
  9. Let it cool slightly before cutting into squares and serving.

Feel free to swap out the cheese or vegetables based on your family’s preferences. Use day-old bread for best results.
