A quick and flavorful skillet chicken dish perfect for busy weeknights.

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Generously season the chicken breasts with salt and pepper on both sides.
  3. Place the chicken in the skillet and cook for 5-7 minutes on each side, until nicely browned and cooked through.
  4. Once the chicken is cooked, remove it from the skillet and set it aside.
  5. Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent.
  6. Incorporate the sliced bell pepper and cook for another 2-3 minutes until softened.
  7. Pour in the chicken broth, then sprinkle the paprika over the mixture. Stir well to combine.
  8. Return the chicken to the skillet, cover, and let it simmer for about 5-10 minutes to absorb the flavors.
  9. Before serving, garnish with fresh parsley for a vibrant touch.

Notes

For a vegetarian option, substitute chicken with tofu and use vegetable broth.
