Ingredients

Scale
  • 6 large eggs
  • 1 cup milk
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • 1 teaspoon olive oil

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs and milk until fully combined.
  3. Fold in the chopped spinach, shredded cheese, and diced onion. Season with salt and pepper according to your taste preferences.
  4. Heat olive oil in a skillet over medium heat. Sauté the onions until they become translucent.
  5. Pour the egg mixture into the skillet, gently stirring for about 2 minutes to blend everything well.
  6. Transfer the mixture into a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top appears golden brown.
  8. Allow the casserole to cool slightly before serving.

Notes

Ensure you don’t overcook the casserole; it should be set but still moist for the best flavor.
