Golden outside, tender inside, these roasted potatoes with rosemary and paprika are the perfect quick and dependable side dish.

Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the potatoes into even-sized cubes (1-inch pieces).
  3. Toss the potato cubes with olive oil, salt, pepper, garlic powder, rosemary, and paprika in a large bowl until evenly coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through for even browning.
  6. Serve warm as a side dish, adding a sprinkle of flaky salt or a squeeze of lemon if desired.

Notes

For best results, cut potatoes to uniform size and don’t crowd the baking sheet. Use fresh rosemary when possible.
