A vibrant meal featuring flaky salmon, creamy coconut rice, and zesty mango salsa, perfect for weeknight dinners or leisurely brunches.

  • 2 salmon fillets
  • 1 cup coconut rice
  • 1 cup diced mango
  • 1/2 red onion, diced
  • 1/2 red bell pepper, diced
  • 1 lime, juiced
  • Cilantro, for garnish
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Cook the coconut rice according to package instructions, usually simmering in water and coconut milk.
  2. Heat olive oil in a skillet over medium heat; season salmon fillets with salt and pepper.
  3. Once hot, place salmon in skillet and cook for 4-5 minutes on each side until flaky.
  4. In a bowl, mix diced mango, red onion, red bell pepper, lime juice, and a pinch of salt for salsa.
  5. Layer cooked rice in a bowl, top with salmon, and add mango salsa.
  6. Garnish with fresh cilantro and serve with a lime wedge.

Notes

Feel free to substitute brown rice or swap mango for pineapple. Add jalapeño for heat or use quinoa for a protein boost.
