A quick and nutritious dish featuring creamy avocado, zesty salsa, and leftover taco filling on perfectly toasted bread.

Ingredients

  • Leftover taco filling
  • 1 ripe avocado
  • Salsa
  • 1 egg (optional)
  • Bread (for toasting)
  • Salt
  • Pepper

Instructions

  1. Toast the bread until it’s golden brown.
  2. In a bowl, mash the avocado with a pinch of salt and pepper to taste.
  3. Spread the mashed avocado evenly over the warm, toasted bread.
  4. Layer on the leftover taco filling followed by a spoonful of salsa on top.
  5. If desired, cook the egg to your liking and place it on top of the layered toast.

Notes

Garnish with cilantro or lime for added freshness. Pair with mixed greens or tortilla chips.
