Sausage and White Bean Soup

A hearty and comforting soup made with Italian sausage, creamy white beans, and leafy greens, perfect for busy weeknights.

Ingredients

  • 1 pound Italian sausage
  • 1 can (15 oz) white beans, rinsed and drained
  • 4 cups vegetable or chicken broth
  • 2 cups kale or spinach, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add the sausage. Brown it, breaking it into pieces, until cooked through and nicely caramelized.
  2. Drain any excess fat from the skillet, then transfer the cooked sausage into a crock pot.
  3. Add the white beans, broth, chopped kale or spinach, diced onion, diced carrots, minced garlic, dried thyme, and a pinch of salt and pepper to the crock pot.
  4. Stir everything to combine so the flavors start to mingle.
  5. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the vegetables are tender and the flavors have melded.
  6. Taste and adjust seasoning before serving, then ladle into bowls and serve hot.

Notes

For a quicker version, simmer on the stovetop for 20–30 minutes instead of slow-cooking.
