Delicious bite-sized pancakes with savory sausage, perfect for breakfast or brunch.

Ingredients

  • 1 cup pancake mix
  • 1 cup milk
  • 1 large egg
  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese (optional)
  • Syrup for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Combine the pancake mix, milk, and egg in a mixing bowl until just combined.
  3. Fold in the crumbled sausage and shredded cheese, if using.
  4. Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 15 to 20 minutes, or until the bites are golden brown.
  6. Allow to cool slightly before removing from the tin. Serve warm with syrup if desired!

Notes

These bites can be enhanced with sides like fresh fruit or Greek yogurt. They can also be frozen for up to 2 months.
