Delightful protein-packed biscuits perfect for breakfast or brunch, featuring cottage cheese, ham, and cheddar.

Ingredients

  • 1 cup cottage cheese
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup grated cheddar cheese
  • 1 cup diced ham
  • 1/4 cup chopped chives
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the flour, baking powder, and salt until well-combined.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the cottage cheese until everything is mixed well.
  5. Gently fold in the grated cheddar cheese, diced ham, and chopped chives until evenly distributed.
  6. Turn the dough out onto a floured surface. Knead gently just until it comes together.
  7. Pat the dough into a thickness of about 1 inch and cut out rounds or squares using a biscuit cutter or knife.
  8. Arrange the biscuits on a baking sheet lined with parchment paper.
  9. Brush the tops with beaten egg if desired.
  10. Bake for 15-20 minutes or until the biscuits are golden brown and puffed up.
  11. Allow them to cool slightly before indulging!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in a toaster oven.
