Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cups mixed vegetables (carrots, bell peppers, and green beans)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until fragrant—about 3-4 minutes.
  2. In your crockpot, place the chicken breasts at the bottom.
  3. Layer the mixed vegetables on top.
  4. Pour one cup of chicken broth into the crockpot and sprinkle everything with thyme, salt, and pepper.
  5. Cover and let it cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender. Serve warm, and enjoy!

Notes

Don’t skip sautéing the onion and garlic for a deeper flavor. Feel free to swap in your favorite veggies or adjust the seasonings based on your taste preferences.
