A comforting dish that combines savory ground beef, crispy herb-roasted potatoes, and vibrant steamed broccoli, perfect for a weeknight dinner.

  • 200g lean ground beef
  • 2 medium potatoes, diced skin on
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt & black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the diced potatoes with olive oil, oregano, thyme, garlic powder, salt, and black pepper until well coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer and roast for 25-30 minutes, until golden and crispy.
  4. While the potatoes roast, heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks. Season with salt and pepper. Cook until no longer pink and let it get slightly crispy on the edges.
  5. In a separate pot, bring water to a boil for steaming the broccoli florets. Steam for 2-3 minutes until bright green and just tender.
  6. Once everything is cooked, plate the ground beef, crispy roasted potatoes, and vibrant steamed broccoli. Sprinkle with a final pinch of salt and pepper if desired.

Notes

For best results, do not overcrowd the baking sheet, and consider using fresh herbs for added flavor. This dish can also be customized with different vegetables.
