A hearty lentil breakfast bowl packed with nutrients and comforting flavors, perfect for brisk mornings or any time of day.

Ingredients

  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Brown or Green Lentils, rinsed
  • 4 cups Vegetable Broth
  • 1 tsp Dried Thyme
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin
  • Salt and Black Pepper to taste
  • 12 Large Eggs
  • 2 cups Fresh Spinach
  • 1/2 Avocado, sliced or mashed
  • 1 tbsp Crumbled Feta Cheese (optional)
  • 1 tbsp Fresh Parsley or Cilantro, chopped
  • Pinch of Red Pepper Flakes (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté until translucent, about five minutes.
  2. Incorporate the minced garlic and cook for another minute until fragrant.
  3. Sprinkle in the dried thyme, smoked paprika, and ground cumin. Toast for about 30 seconds.
  4. Add the rinsed lentils, stirring everything together.
  5. Pour in the vegetable broth and season with salt and pepper to taste. Bring to a gentle simmer, cover, and let cook for 25-30 minutes until tender.
  6. Poach or fry the eggs to your desired doneness.
  7. Sauté the fresh spinach in a separate pan for 1-2 minutes until wilted.
  8. Serve by dividing the lentil mixture into bowls, topping with sautéed spinach, poached egg, avocado, feta, herbs, and red pepper flakes.

Notes

For a vegan option, omit eggs and feta or use plant-based alternatives. Customize the greens and spices based on preference.
