Delightful, protein-packed egg bites made with savory sausage and cheese, perfect for a quick breakfast or brunch.

Ingredients

  • 6 large eggs
  • 0.5 cup milk (whole or 2%)
  • 0.5 cup cooked breakfast sausage (crumbled)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup green onions (chopped)
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or silicone mold.
  2. In a skillet over medium heat, brown the sausage until it’s cooked through. Drain any excess fat and let it cool.
  3. In a large mixing bowl, whisk the eggs, milk, salt, and pepper together until smooth.
  4. Fold in the cooled sausage, shredded cheddar, and chopped green onions gently.
  5. Divide the mixture among the muffin cups, filling each about 3/4 full.
  6. Bake for 20–22 minutes until the egg bites are set and golden on top.
  7. Allow them to cool for a few minutes before removing and serving.

Notes

For a lighter option, substitute turkey sausage. For a spicy kick, try pepper jack cheese.
