A delightful cornbread featuring rich Southern flavors and a golden crust, perfect as a side for chili or gumbo.

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 cup cooked and crumbled bacon or sausage (optional)
  • 1/2 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and grease your cast iron skillet or baking dish.
  2. In a large bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix until well combined.
  3. In another bowl, whisk together milk, eggs, and vegetable oil until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined—no need to over-mix; a few lumps are perfectly fine!
  5. If adding bacon, sausage, or green onions, fold them into the batter now.
  6. Pour the batter into your prepared skillet, spreading it evenly.
  7. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Allow it to cool for a few minutes before slicing. Serve warm and enjoy!

Notes

For extra flavor, brown your oil or butter in the skillet before adding the batter. Use a well-seasoned cast iron skillet for the best results.
