A vibrant dish of poached eggs in a spiced tomato and pepper sauce, paired with creamy avocado toast.

  • 4 eggs
  • 2 cups tomatoes, chopped
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 slices bread
  • 1 avocado, smashed
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a cast-iron skillet over medium heat. Add the diced onions and bell peppers, sautéing until softened, approximately 5-7 minutes.
  2. Stir in the chopped tomatoes and your selected spices. Allow the mixture to simmer for about 10 minutes, letting the flavors meld together.
  3. Create small wells in the sauce and crack the eggs into them. Cover the pan and cook until the eggs are done to your liking—typically 5-7 minutes for slightly runny yolks.
  4. Toast the bread until golden brown. Smash the avocado in a bowl, season with salt and pepper, and spread generously on the warm toast.
  5. Serve your shakshuka warm, alongside the avocado toast, and enjoy every bite!

Notes

Garnish with fresh herbs like cilantro or parsley. Pair with a fresh green salad or roasted potatoes.
