An easy and adaptable breakfast option combining scrambled eggs, savory sausage, and gooey cheese rolled in warm tortillas, perfect for busy mornings and leisurely brunches.

Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 cup cooked diced potatoes or hash browns
  • Salt and pepper to taste
  • 8 large flour tortillas
  • Salsa (for serving, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
  3. Stir in the shredded cheese, cooked sausage, and potatoes until evenly combined.
  4. Spread the mixture onto a greased sheet pan in an even layer.
  5. Bake for 15-20 minutes, or until the egg mixture is fully set.
  6. Let it cool slightly before cutting into rectangles that match the size of your tortillas.
  7. Place one rectangle on each tortilla, roll them up tightly, and set them seam-side down on the sheet pan.
  8. Return to the oven for an additional 5-10 minutes to warm the tortillas through.
  9. Serve with salsa on the side, if desired.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the microwave or oven.
