A quick and flavorful sheet pan meal featuring seasoned chicken and colorful bell peppers, served in warm tortillas.

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: avocado, salsa, cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well to ensure everything is evenly coated with the spices and oil.
  3. Spread the mixture evenly on a sheet pan in a single layer.
  4. Bake for 20-25 minutes, or until the chicken is fully cooked and the vegetables are tender and slightly caramelized.
  5. Remove from the oven and serve in warm tortillas with your favorite toppings!

Notes

For a spicier kick, consider adding diced jalapeños before baking. You can also swap chicken for turkey or shrimp for different variations.
