  • 1 red onion, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • Kosher salt
  • Fresh cracked pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Arrange the chicken pieces, onion, and all the peppers in a single layer on the prepared sheet pan.
  3. Drizzle the olive oil over everything, then sprinkle with the chili powder, cumin, garlic powder, paprika, oregano, onion powder, Kosher salt, and fresh cracked pepper. Toss to ensure everything is evenly coated.
  4. Bake for 10 minutes, then stir the mixture. Bake for an additional 5 minutes.
  5. Switch the oven setting to broil and cook for 2-3 minutes, keeping a close eye to prevent burning.
  6. Serve the fajitas on warm tortillas with your preferred toppings. Enjoy!
