A refreshing salad combining succulent shrimp, creamy avocados, and vibrant vegetables, perfect for a light meal.

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1 cup zesty salsa

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the shrimp and cook for 2-3 minutes, or until they turn pink.
  3. Drain the shrimp, then immediately chill them under cold water to stop the cooking process.
  4. In a large mixing bowl, combine the cooled shrimp, diced avocados, halved cherry tomatoes, finely chopped red onion, and chopped cilantro gently.
  5. In a separate small bowl, whisk together lime juice, salt, black pepper, and cumin to make the dressing.
  6. Drizzle the dressing over the shrimp mixture and toss gently to coat everything evenly.
  7. Serve the salad with a side of zesty salsa for dipping or drizzling.
