A quick and delicious stir fry featuring chicken, zucchini, and colorful veggies, perfect for busy weeknights or meal prep.

  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. In a large skillet, warm the olive oil over medium heat.
  2. Add the sliced chicken to the hot skillet. Cook for about 5-7 minutes, or until browned and cooked through.
  3. Toss in the minced garlic and sliced bell pepper. Sauté for an additional 2-3 minutes until fragrant.
  4. Add in the zucchini slices, then pour in the soy sauce. Stir everything together well.
  5. Let it cook for another 3-4 minutes, until the zucchini is tender but still slightly crisp.
  6. Sprinkle salt and pepper according to your preference.
