A quick and delightful dish featuring juicy chicken in a sweet and tangy orange glaze served over fluffy white rice.

  • 1 lb chicken breasts, diced
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Cooked white rice, for serving

Instructions

  1. In a small bowl, whisk together the orange juice, soy sauce, honey, and cornstarch until smooth. Set aside.
  2. In a large skillet, heat vegetable oil over medium-high heat until shimmering.
  3. Add the diced chicken and sear for about 2 minutes without stirring.
  4. Stir the chicken and continue cooking for an additional 5-7 minutes until the chicken is golden and cooked through.
  5. Push the chicken to the side of the skillet. Add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  6. Pour the prepared orange sauce over the chicken. Stir thoroughly to coat.
  7. Reduce the heat and allow to simmer for 3-5 minutes until the sauce thickens.
  8. Serve the orange chicken over warm, cooked white rice.

For a unique twist, consider adding veggies like bell peppers or snap peas during the sauté process or using chicken thighs for a richer flavor.
