  • 2 lb boneless skinless chicken breasts
  • 1 cup chicken broth (low sodium)
  • 0.5 cup chopped onion
  • 2 cloves garlic (minced)
  • 1 tsp dried thyme
  • 0.5 tsp black pepper
  • 0.5 tsp salt

Instructions

  1. Place the boneless skinless chicken breasts at the bottom of your slow cooker.
  2. Pour in the chicken broth until the chicken is just covered.
  3. Evenly sprinkle the chopped onion and minced garlic over the chicken.
  4. Add the dried thyme, black pepper, and salt.
  5. Cover the slow cooker with its lid, setting it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  6. Once cooked, use two forks to shred the chicken while it’s still hot, mixing it well to soak up those delicious juices.
  7. Serve your Slow Cooker Chicken over rice, mashed potatoes, in tacos, or on a fresh salad.
