A delightful blend of tender chicken thighs with a sweet and savory honey garlic sauce, perfect for busy weeknights.

  • 600g boneless skinless chicken thighs
  • 120ml honey
  • 80ml soy sauce
  • 4 cloves garlic, minced
  • 60ml ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon sesame seeds (optional)
  • 2 stalks green onions, chopped (optional)

Instructions

  1. In a small bowl, whisk together honey, soy sauce, minced garlic, ketchup, and rice vinegar until well combined.
  2. Place chicken thighs in an even layer in the slow cooker. Pour the prepared sauce over the chicken, ensuring it is well coated.
  3. Cover and set your slow cooker to low for 240 to 300 minutes or high for 150 to 180 minutes.
  4. Once cooked, remove the chicken from the slow cooker and set aside on a cutting board.
  5. Create a slurry by stirring cornstarch and water together in a small bowl. Add this to the sauce remaining in the slow cooker, stirring well. Switch to high and cook for an additional 10 to 15 minutes until thickened.
  6. Use two forks to shred the chicken, then return it to the thickened sauce, mixing to coat well.
  7. Enjoy hot, garnished with sesame seeds and chopped green onions, if desired.

Notes

For a healthier option, use low-sodium soy sauce. You can also add vegetables towards the end of cooking for extra nutrition.
