A comforting and flavorful slow cooker dish featuring chicken, sun-dried tomatoes, and a creamy sauce that elevates weeknight dinners.

Ingredients

  • 650 g Skinless, boneless chicken breast (cut into bite-sized pieces)
  • 30 g Plain flour
  • Sea salt and freshly ground black pepper
  • 3 Garlic cloves (peeled and crushed)
  • 100 g Sun dried tomatoes (drained and very finely chopped)
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 300 ml Boiling water
  • 1 Chicken stock cube (cracked)
  • 100 g Cream cheese
  • 50 g Parmesan (grated)
  • 15 g Fresh basil leaves

Instructions

  1. Toss bite-sized chicken pieces in plain flour, seasoning with sea salt and freshly ground black pepper.
  2. Place the floured chicken into the slow cooker. Add crushed garlic, sun-dried tomatoes, dried oregano, paprika, and the cracked chicken stock cube.
  3. Carefully pour boiling water over the mixture to combine.
  4. Set your slow cooker to HIGH for 2.5 to 3 hours or LOW for 5 to 6 hours. Cook until the chicken is tender and flavorful.
  5. Just before serving, mix in the cream cheese, grated Parmesan, and chopped fresh basil to create a sumptuous sauce. Serve warm over rice or creamy mashed potatoes.

Notes

For added flavor, sear the chicken briefly before adding it to the slow cooker. Adjust seasonings to taste and add crushed red pepper flakes for some heat if desired.
