  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Sear the chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook them until they turn golden brown, about 5-7 minutes on each side. Remove the chicken from the skillet and set aside.
  2. Sauté the vegetables: In the same skillet, add the diced onion and sliced mushrooms. Sauté until the onions are translucent and mushrooms are tender, which should take about 5 minutes.
  3. Add garlic: Stir in the minced garlic and cook for an additional minute until it becomes fragrant.
  4. Make the sauce: Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer and thicken slightly.
  5. Return the chicken: Add the chicken breasts back to the skillet, smothering them in the sauce. Cover and cook for another 10-15 minutes or until the chicken is fully cooked through.
  6. Serve: Plate the chicken drizzled with the creamy gravy, topped with crumbled bacon and freshly chopped parsley.
