Delightful pancakes inspired by traditional churros, coated in cinnamon sugar for a sweet breakfast treat.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until well blended.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined, being cautious not to overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. For each pancake, pour 1/4 cup of batter onto the skillet.
  6. Cook until bubbles form on the surface; gently flip and cook until both sides are golden brown.
  7. Remove from the skillet and sprinkle with cinnamon sugar immediately.
  8. Repeat the process with the remaining batter and serve warm.

Notes

Serve with maple syrup or fresh fruits for added flavor. Leftovers can be stored for up to three days in the fridge.
